By including all the colors of the rainbow from fruits and vegetables, you are ensuring that your body is receiving all the nutrients and color energy it needs to stay healthy and balanced. Color in our food shows us the value of that food. For example, yellow and orange fruits and vegetables (citrus fruits, squash, papaya, for example) are abundant in vitamins C and A. Green veggies and fruits (kale, spinach, kiwi, avocado) are high in vitamins K, B, and E. Purple produce on the other hand (eggplant, red cabbage, grapes) are high in vitamins C and K.
